Grilled Surf and Turf Skewers with Chimichurri

Ingredients You’ll Need

For the Skewers:

  • 1 lb beef tenderloin, cut into 1-inch cubes
  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Bamboo or metal skewers (soak bamboo skewers in water for 30 minutes before grilling)

For the Chimichurri Sauce:

  • 1 cup fresh parsley leaves, packed
  • 1/2 cup fresh cilantro leaves, packed
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Dash of red pepper flakes (optional, for heat)
  • Salt and pepper, to taste
