Ingredients
4 medium sweet potatoes, sliced into rounds
3 tablespoons olive oil
4 cloves garlic, minced
1/2 cup grated parmesan cheese
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
Fresh parsley, chopped (optional, for garnish)
Directions
Preheat your oven to 400°F (200°C).
In a large bowl, combine the sweet potatoes, olive oil, minced garlic, dried thyme, dried rosemary, salt, and pepper. Toss until the sweet potato cubes are evenly coated.
Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the sweet potatoes are golden brown and tender.
Remove from the oven and immediately sprinkle the grated parmesan cheese over the hot sweet potatoes. Toss lightly to ensure the cheese melts and coats the potatoes evenly.
Transfer to a serving dish and garnish with fresh chopped parsley, if using. Serve hot.
