  1. Preheat your  oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish or a similar-sized baking pan.
  2. Prepare the  apples: Peel, core, and chop the apples into small cubes. Set aside.
  3. Mix dry ingredients: In a large bowl, combine the rolled oats, cinnamon, nutmeg, salt, and brown sugar (if using).
  4. Combine wet ingredients: In a separate bowl, whisk together the milk, eggs, maple syrup (or honey), and vanilla extract.
  5. Combine wet and dry ingredients: Pour the wet mixture into the dry oat mixture and stir until well combined.
  6. Add apples and optional ingredients: Fold in the diced apples, chopped nuts, and dried fruit (if using).
  7. Pour into the baking dish: Transfer the oatmeal mixture into the prepared baking dish and spread it out evenly.
  8. Bake: Bake for 35–45 minutes, or until the oatmeal is set and golden brown on top. You can check doneness by inserting a toothpick into the center—if it comes out clean, it’s ready.
  9. Cool and serve: Let the oatmeal bake cool for a few minutes before serving. It can be enjoyed warm as a comforting breakfast or a snack.
