Easy Baked Chicken and Zucchini

  • ½ teaspoon paprika (optional)

  • Salt and pepper, to taste

  • 1 lemon, sliced (for garnish)

  1. Preheat Oven:

    • Preheat oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper.

  2. Season the Chicken:

    • In a small bowl, mix garlic powder, Italian seasoning, paprika (if using), salt, and pepper.

    • Rub the spice mixture evenly over the chicken breasts.

  3. Prepare the Zucchini:

    • Toss zucchini slices with 1 tablespoon olive oil and a pinch of salt and pepper.

  4. Assemble in Baking Dish:

    • Place seasoned chicken in the dish and arrange zucchini around it.

    • Drizzle with the remaining 1 tablespoon olive oil to keep everything moist.

  5. Bake:

    • Bake for 20–25 minutes, or until chicken reaches 165°F (74°C) and zucchini is tender.

  6. Serve:

    • Let chicken rest for a few minutes, then garnish with lemon slices for a fresh, zesty finish.
