Buckeye Brownie Cookies

In case you’ve never had buckeyes before, they’re a classic no-bake treat made with balls of sugary peanut butter fudge dipped in chocolate. A circle of peanut butter is left uncovered, making them resemble the nuts of an Ohio buckeye tree — like the eye of a deer!

Ingredients

1 box fudge brownie mix (19.5 oz or family size)

2 teaspoons vanilla extract

1 teaspoon cornstarch

¼ cup butter, melted

4 ounces cream cheese, softened

1 egg

For the Peanut Butter Center:

1 cup powdered sugar

1 cup creamy peanut butter

For the Chocolate Topping:

4 ounces semi-sweet chocolate chips
